Scientific name : Setaria – Italica (L)
English :Foxtail, Italian millet, Hindi :Kangn ,Kakum, Sanskrit: Kanguni ,Kannada Navane , Marathi Kang,Rala, Foxtail millet is one of the oldest cultivated millets. Foxtail millet provide a host of nutrients, has a sweet flavor and is considered to be one of the most digestible and non allergic grain available. It contains fibre, protein, calcium and vitamins. It is a nutritive food for children and pregnant women. It controls blood sugar and cholesterol. It increases disease resistant capacity when consumed and is considered as ideal food for people suffering from diabetes and gastric problem. It is rich in dietary fibre and minerals such as coper and iron that keeps one’s body strong and immune.
How to use it:
To make chapatti , roti , for one cup of Foxtail Millet flour, half cup of water is sufficient.
Boil the water, add little salt for taste, add Foxtail Millet flour and stir it. Allow it to get cool, mix it well, knead it into smooth soft dough. Make round balls and make chapatti, roti.
To make Dosa: Take a suffient portion of millet flour ,add water and make a batter. Add little salt for taste. Put a flame on. Apply little oil on a pan and put the batter, spread it ,cover it with lid. Allow it to cook for two minutes and turn it. After two minutes remove it from a pan. Your millet dosa is ready to serve.
